I have had a lot of requests for the waffle recipe that I make for my kids so here it is.

Typically I will make a large batch of this waffles and then freeze them.  In the mornings I grab the waffles and pop’em in the toaster.

2 Organic Eggs
2 Cups Pamela’s Gluten-Free Flour
1 3/4 Cup Milk (I use Soy or Coconut Milk)
1/2 Cup Coconut Oil

This is the base of for the waffles and then I will mix in a number of different things depending on what I have around the house.  The following are a some of the things that I have used in the waffles:

-Ground Flax Seed
-Ground Chia Seed
-Canned Butternut Squash
-Canned Pumpkin
-Peanut Butter
-Almond Butter

I don’t have specific amounts for these ingredients and modify based on what’s around the house.  My kids are picky eaters and they love these waffles!
